Kale and Ricotta Ravioli

It's no secret that, here at EDF, we love kale. We love it! And today, Sarah isĀ using this wonder vegetable to create super-simple homemade ravioli. Her secret is to use premade wonton wrappers as the "dough" for this pasta -- so you don't need measure, mix, roll, or cut! Also added to the mix is fresh ricotta cheese along with the greens, which gives each bite a creamy finish. Stuffing and sealing the ravioli is a great kid-friendly step, so invite your little one into the kitchen to help. Who knows? You might discover a new chef in your family!

Ready to cook? Get shopping first:

  • Coarse salt and ground pepper
  • 1 bunch kale (3/4 pound), tough stems and ribs removed
  • 1 3/4 cups ricotta
  • 1/3 cup grated Parmesan
  • 1 garlic clove, minced
  • 48 square wonton wrappers (from a 12-ounce package)
  • 4 cups marinara sauce, warmed
