Easy Rice Pudding

As far as desserts go, rice pudding is in a comforting category all its own. But as much as we love this treat here at EDF, traditional recipes can often be long and complicated. Not anymore! Today, I'm using Arborio rice (the grain often chosen for risotto), which has enough starch to make for an incredibly creamy dish. So creamy, in fact, that this recipe doesn't require any eggs or tempering. The finished dish is rich and cozy -- and exactly what you should be enjoying right now.

Here's what you'll need to make this recipe:

  • 1 cup Arborio rice
  • 1/2 cup sugar
  • 1/4 teaspoon coarse salt
  • 4 3/4 cups whole milk, divided
  • 1 1/2 teaspoons pure vanilla extract
  • 1/4 cup heavy cream
  • Ground cinnamon, for serving
