Today's Recipe: Gluten Free Oatmeal Raisin Cookies

There are many different theories as to why, all of a sudden, gluten intolerance was the new ailment of choice. Rather than harp on what the flour-free are missing, however, we'd prefer to cater to them -- deliciously. Today, Sarah Carey creates a gluten free oatmeal raisin cookie that is so light and chewy, even heartiest wheat lovers will adore it. Really! And even better news, these healthier little bites use oats (an already GF food) in place of fancy flour mixes and other additives. These cookies need to be made to be fully appreciated -- so try them out now!

Beat wheat. Buy these ingredients instead:

  • 4 1/2 cups gluten-free old-fashioned oats, divided
  • 2 tablespoons cornstarch
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon gluten-free baking powder
  • 1/2 teaspoon fine salt
  • 2 sticks unsalted butter, room temperature
  • 3/4 cup granulated sugar
  • 1/2 cup packed light-brown sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 3/4 cup chocolate chips
  • 3/4 cup raisins
