While summer seems to be slipping away from us faster than we would like here in New York, we still have plenty of many of the produce we associate with summer is at its best right now. Delicious on their own, peaches and plums become even sweeter when roasted (caramelization brings out the depth of their flavor). Roasted fruit is a uniquely indulgent treat and one that everyone should experience before the season passes us by. But we're not talking about desserts here, we're talking about cocktails! I'm not a fan of super elaborate drinks that take as much time as a meal to make, but the flavor in this drink is worth it, I promise. Plus, as the fruit roasts, it creates its own intensely flavored simple syrup -- meaning you don't need to make one at all! See, this recipe really isn't that complicated after all.
Because your fruit may vary in sweetness, be aware that you may have to add a little more sugar or a little more water or ice to achieve a perfectly balanced drink. Enjoy and cheers to summer not officially being over just yet.
Roasted Peach and Plum Lemonade
2 peaches, quartered
4 plums, quartered
1/2 cup sugar, plus more if needed
1 cup lemon juice
3/4 cup vodka
3/4 cup water
Preheat oven to 425. On a rimmed baking sheet, toss peaches and plums in sugar to coat. Roast for 25 to 30 minutes until fruit is soft and has created a syrup. Transfer fruit and all juices to a blender and let cool 10 to 15 minutes. Add lemon juice and water and blend until smooth. Add 1 cup ice and blend, add additional sugar if necessary to achieve desired sweetness.
