The calendar may say September, but it still feels like summer in New York (hello, 90 degree weather!). But as warm as it is outside, we're feeling more than ready to embrace the fall season. Fortunately, our warm weather produce is still perfectly in season and begging to be made into bright soups. We love making these quick recipes because, while they make for a lovely and light dinner right now, they also freeze well -- which means you can enjoy the flavors of August even if it's January.
