Today's Recipe: Salmon with Spicy Cucumber-Pineapple Salsa

Salsa: tomatoes, red onions, jalapeno, and cilantro, right? Sure. But what about something a little different, like a cucumber pineapple salsa! This sweet, spicy, and tangy recipe is one that you'll want to serve with just about anything: chicken, pork, chips, you name it. Today, however, Sarah Carey is spooning it onto pan-seared salmon to create a healthy and super summery plate. The final dish is refreshing and light -- and exactly what should be on your dinner table!

To make this pretty plate, you'll need to shop for these ingredients:

  • 2 tablespoons fresh lime juice (from 1 lime)
  • 1 tablespoon honey
  • 2 tablespoons vegetable oil
  • 2 Kirby cucumbers, finely diced
  • 1 cup finely diced fresh pineapple (about of a whole pineapple)
  • 2 scallions, thinly sliced
  • 1 jalapeno chile (ribs and seeds removed), minced
  • 1/4 cup fresh basil leaves, chopped
  • coarse salt and ground pepper
  • 4 skin-on salmon fillets (6 to 8 ounces each), patted dry
