Today's Recipe: Raspberry Jam Hand Pies

Pies are finicky things and taming berries to fit into a perfect pie crust can be the ultimate challenge of the summer. Getting that bottom crust to stay crispy -- now that would require a miracle. But, you’re just in luck! Today's recipe offers the perfect solution to pie problems. No more soggy-bottomed crusts and no more fretting over runny filling. Simply swap in puff pastry for the traditional pate brisee, and you’ve got yourself a flaky, crispy, palmful of deliciousness. And, to top it all off, we've added a tangy lemon glaze.

  • All-purpose flour, for dusting
  • 2 sheets frozen puff pastry, thawed
  • 2/3 cup strawberry jam
  • 1 large egg yolk, lightly beaten
  • 1 tablespoon lemon juice
  • 1/3 cup confectioners' sugar

    The recipe says "Raspberry Jam Hand Pies" but the ingredients call for "Strawberry Jam". Just saying...

    Good catch! Sarah Carey made this batch with raspberry jam, but the original recipe that ran in print called for strawberry. Either way, they're delicious.
