Cocktail O'Clock: Cucumber Collins

How many times have we called a beverage the "most refreshing drink ever"? It's not that we weren't tell the truth -- we were! -- it's just that, in the warmer months, we're constantly on the hunt for something that's crisp and cool. But today, we think we may have found the coolest drink yet: the cucumber collins. Like it's predecessor the Tom Collins, this cocktail is made with gin, lemon juice, and club soda, but it gets a special kick from fresh cucumbers. It's light and slightly tart, making it perfect for brunch or poolside parties.

Here's what you'll need:

  • 1/4 cup English cucumber, minced
  • 2 teaspoons sugar
  • 2 ounces gin
  • 1 teaspoon lemon juice
  • Ice
  • club soda
  • 6 dashes angostura bitters

In a cocktail shaker, muddle cucumber and sugar until sugar has dissolved. Add gin and lemon juice, and ice shake well, and strain into a Collins glass filled with ice. Top with club soda and add bitters before serving.
