So here's the thing: if you're planning to spend a day outdoors, don't you want to pack foods that will taste as good in the late afternoon as they did in the morning? It was that thought that inspired today's picnic perfect recipe for pesto-yogurt chicken.

We know, we know -- picnics are for fried chicken! But, why is that? Fried chicken is all about the skin and after hours in the sun, that skin will be soggy. Instead, opt for this healthier, easier to prepare, and sun-proof choice (really! This dish will still taste great at room temperature).  Bring this to your next picnic party (even if that happens to be right in your own kitchen).

Want to get your green (sauce) on? Start shopping for these ingredient:

  • 1 whole chicken (3 1/2 to 4 pounds) cut into 8 pieces
  • 1/4 teaspoon coarse salt and ground pepper
  • 2 cups pesto-yogurt sauce
  • 2 garlic cloves
  • 1 tablespoon extra-virgin olive oil
