Let's talk tacos.
They're practically perfect right? Where other dish allows you to hold a world of flavors right in the palm of your hand? And please don't say sandwiches -- because, as much as we love that lunchtime meal, a good taco is so much more than that. It's a dinnertime vacation, a transformative trip for your taste buds.
Today's recipe is a smokey, spicy mix of deliciousness. Chicken marinates in chopped chipotles in adobe and cumin before being added to the grill. It's an out-of-this world flavor combination that you'll want to make over and over (our former test kitchen intern Frieda told us she's made this at how 3 times already).
Ready to roll with it? First, you'll need these ingredients:
- 3 tablespoons finely chopped chipotles in adobo
- 3/4 teaspoon ground cumin
- 1/2 teaspoon salt
- 4 chicken cutlets
- 1 bunch sliced radishes and chopped radish greens
- 4 sliced scallion greens
- 2 tablespoons olive oil
- 1 1/2 tablespoons lime juice
- 8 toasted flour tortillas
- Smashed avocado
