Today's Recipe: Broiled Fish and Summer Salad

Give your grill a break and let your broiler do the work tonight. Today's recipe takes just 15 minutes but produces one of our test kitchen's favorite meals: a simply cooked white fish fillet and an outrageously tasty summer salad. With fresh produce at every market (including your local grocery store!), there's no better time to take advantage of what the season has to offer. Make this meal and enjoy!

Shopping for your ingredients will take longer than cooking. Get started now:

  • 3 tablespoons olive oil, divided
  • 4 lemon sole or flounder fillets (1 3/4 pounds total)
  • Salt and pepper
  • 3 cloves garlic, minced, divided
  • 5 medium tomatoes, cut into wedges
  • 1 English cucumber, cut into half-moons
  • 1 1/2 cups corn kernels (from 2 ears)
  • 2 tablespoons lemon juice
