Want to go on a global adventure in the middle of the week? Make this Asian noodle salad! The vibrant flavors of lime juice, scallions, and mint combined with soba noodles are taken to new levels when given an added crunch factor (hello, peanuts!). Served hot or at room temperature, this is one dinnertime trip you should definitely embark upon. Bon voyage!

Have the timer ready? Grab these ingredients and get going:

  • Coarse salt
  • 12 ounces soba (Japanese buckwheat noodles)
  • 2 tablespoons soy sauce
  • 2 tablespoons fresh lime juice
  • 1 tablespoon vegetable oil, such as safflower
  • 2 scallions, trimmed and thinly sliced
  • 1/2 English cucumber, halved lengthwise and thinly sliced
  • 1/4 cup unsalted peanuts, coarsely chopped
  • 1/4 cup fresh mint leaves, plus more for garnish
