Today's Recipe: Grilled Chicken with Shaved Cucumber Salad

This week is all about infusing flavor into recipes that are light and fresh (because who couldn't use a bacon break from time to time?). Sarah will be offering up good-for-you recipes that are still full of wonderfully complex tastes. Excited? You should be --healthy food has never looked this good before!

Ready to fire up your grill? Here's a shopping list to get you started:

  • 3 English cucumbers
  • 2 stalks celery, reserving leaves if desired
  • 1/2 medium white onion
  • 1/4 cup mayonnaise
  • 1/4 cup fresh cilantro
  • 2 1/2 teaspoons champagne vinegar
  • Salt and pepper

    This actually looks as delicious as it is healthy. Personally, I would substitute with Veganaise to add an even healthier aspect, although mayonnaise would be fine too. Thank you for the recipe!
