Posted by

Hungry? Chop one clove of garlic and this dinner is practically done. That's it! The flavors in this easy meal are all standalone hits that just happen to come together beautifully. And if your family seems convinced that you slaved in the kitchen for hours, why bother correcting them?

You'll spend more time waiting in line at the market than you will cooking. Start shopping now:

  • 1 tablespoon plus 1 teaspoon extra-virgin olive oil
  • 1 cup cherry or grape tomatoes
  • 1 garlic clove, minced
  • 1 pound large shrimp, peeled and deveined
  • 4 ounces wild or baby arugula (4 cups)
  • Coarse salt and ground pepper
  • 1 tablespoon fresh lemon juice
