Today's Recipe: Roasted Tomato and Pancetta Penne

Pasta is so versatile, which is why we love it! For this dish, all the ingredients are roasted in one pan and then tossed with penne (less cleaning means more time for eating). Could it be any easier? Watch the video to see Sarah make this simple yet delicious meal.

    This pasta was so delicious! I am surprised at how much flavor it had. I will make this again for sure!

    I rarely post reviews of recipes I make but I'm still in awe of how delicious this was. I used a pound of grape tomatoes (they were on sale) and subbed spaghetti squash for pasta. No need for water on this as the tomato mixture was enough to coat the squash. I also used basil instead of parsley (personal preference).

    Next time I'd run my knife through the pancetta slices so that they're more scattered throughout the dish. This will definitely be in the dinner rotation from now on.

    I saw this in my Everyday Food magazine and decided to give it a try. Now I thought it would be pretty good, but it was way more than just good. My husband raved about it the entire time he was eating it. I made a few changes... I added chopped asparagus to the roasting pan with the other veggies. I couldn't find pancetta so i used prosciutto instead and added some garlic powder to the veggies as well. This is definitely a keeper!
