Posted by

Quinoa isn't just for dinner anymore: In this week's Healthy Start we bake the super seed with a few other wholesome ingredients to make a granola-like crunchy topping for yogurt.

Quinoa-Almond Crunch

Serves: 4

Active Time: 15 min

Total Time: 45 min

1 large egg white, beaten

1/4 teaspoon ground cinnamon

4 teaspoons honey

coarse salt

1/2 cup uncooked quinoa, rinsed and drained

2 tablespoons sliced almonds

nonstick cooking spray

Preheat oven to 325°. In medium bowl, whisk 1 tablespoon egg white, cinnamon, honey, and pinch of salt until smooth. Add quinoa and almonds and toss until coated. Spread mixture on a rimmed baking sheet coated with cooking spray and bake, until golden brown, about 20 minutes, stirring quinoa mixture and rotating sheets halfway through. Let cool completely.
