Word on the street is that there's some sort of big holiday feast coming up this week. Turkey, mashed potatoes, stuffing... Sound familiar? We're getting into the Thanksgiving spirit by cutting down on kitchen time during the rest of the meals (yes, let's not forget about those other days of the week) and using convenience foods in clever ways. Today's recipe is a double-whammy: Pre-made polenta makes up the core of this casserole, while jarred, marinated artichoke hearts and great flavor to the filling.
