Cocktail O'Clock: Earl Grey-Infused Gin

Do you love tea? Have you tried it in a your cocktails? Liquor infusions are so easy to make, and you can use high-quality ingredients to really capture the essence of your favorite flavors.  Infusions made at home (with real fruits, spices, teas, etc.) are, in my option, infinitely more delicious than flavored liquors you can buy, and it is fun to make your own custom combinations. All it takes is 1/4 cup of loose earl grey tea leaves and 500 mL of room-temperature gin. I let mine steep for about 2 hours before straining through cheesecloth.

For a simple cocktail, add 1 1/2 ounces of infused gin, 1 teaspoon lemon juice, and 2 teaspoons of simple syrup to a cocktail shaker filled with ice. Pour it all into a tall glass and top it off with a splash of club soda and a lemon. Enjoy!
