Sarah,
LOVE Today's Recipe; I make them on a regular basis and they are almost always hits. I'm afraid that this citrus doodle was... only so-so. We found it was too sweet and not citrusy enough. I have to share with you where we are coming from though -- my friend Anna's Snappy Lemon cookies are the.most.lemony.cookies.ever. Promise. Here's the recipe --
1/2 cup melted unsalted butter
2/3 cup fresh squeezed lemon juice (about 4 lemons)
1 cup white sugar
2 TB grated lemon rind
1 large egg
1 tsp vanilla
2 1/2 cup flour
1/2 tsp baking soda
1/2 tsp salt
For finishing:
-1/4 cup white granulated sugar
-2TB lemon juice
-Combine cooled butter, sugar, egg, rind, juice & vanilla, and beat
-Sift together dry ingredients and fold into wet (do not beat).
-Chill at least 30 minutes.
-Shape into 1/2" balls
-Roll balls into reserved sugar, and press evenly onto lined baking sheet
-Brush with lemon juice
Bake for 10 minutes at 350°
Finished cookies will have a soft cakey interior.
