cocktail o'clock: bittersweet symphony

In a cocktail shaker filled with ice, add 3 ounces gin, 1 ounce elderflower liqueur, and 2 ounces freshly squeezed white grapefruit juice. Shake well and strain into two glasses filled with ice. Top with sparkling water, a few dashes of grapefruit bitters, and garnish with a grapefruit peel. Makes 2 drinks.
