A friend introduced me to Aperol several years ago -- she and her husband drank a lot of it on their honeymoon to Italy. While similar in color to the more well-known Italian aperitif, Campari, it actually contains less alcohol. I prefer it over Campari, as it's more herbal-tasting, with rhubarb and bitter orange flavors, and less sweet. At times, it's the only beverage in my liquor cabinet!
I like it solo on the rocks, but in summer, nothing tastes better than a spritz: Aperol mixed with Italian sparkling wine, Prosecco, and fizzy water. A few weeks ago, I had my own honeymoon in Italy, where I found you can buy packs of Aperol Spritz in supermarkets -- so convenient! For now, it looks like this better-than-a-wine-cooler is just distributed in Italy, so try out our recipe.
In a Champagne flute or narrow glass, combine equal parts Aperol and Prosecco or other sparkling white wine. Top with a splash of club soda. Garnish with orange peel. Salute!
