tossed in some sliced red onion and figerling potatoes, as the pork rested for 10 min, tossed the onion and potatoes....the juices carmelized, some dollops of sour cream and just a wiff of fresh rosemary sprinkled on top, green salad and garden tomatoes, crunchy bread...and moscato! lovely!!!!

This is a delicious way to make pork chops. Tried this tonight and was a little concerned about the anchovy, but the pork chops were flavorful and moist with no hint of a fish taste. Will definitely repeat this one.
