cocktail o'clock: raspberry limoncello popsicles

With a spoon or potato masher, mash 1 pound raspberries. Stir in 3/4 cup simple syrup, 1/3 cup limoncello, and 2 tablespoons lemon juice. Pour into 10 ice pop molds and freeze at least 4 hours or until completely frozen. Recipe for homemade limoncello after the jump.

To enjoy any boozy Popsicle, just make sure you don't add too much liquor or your pop will not freeze.  20 percent alcohol in the mixture is the maximum for pops. We loved the tart combination of limoncello and raspberries for these treats on this summery Friday, but try bourbon, gin, or your favorite spirit.

To make your own limoncello, use a vegetable peeler to remove the zest of 10 lemons. Pour a 750 mL bottle of  vodka over lemon peel into a large container with lid. Refrigerate for 1 week, shaking daily. Combine 3 cups water and 3 cups sugar in a sauce pan, and cook over medium heat until melted. Add simple syrup to vodka mixture, and let sit for at least 3 days before straining into bottles.  Keep mixture refrigerated for up to 3 months.

    Dear Martha,
    Love the sophistication and elegance of the food combinations, but, please, how about some healthier versions. Many servings are very high in salt and fats, especially saturated ones.Love that butter..but! Also, more vegan(no animal products at all)and gluten free adaptations would be wonderful. Coconut oil is solid a room temp and tho it has saturated fat, it is vegetable and of a composition that is healthy not harmful. It can be used for baking and melted for cooking. Flax seed meal and coconut flour are flavorful and high in fiber and have some protein, too. Flax seed meal mixed with water can be used as an egg substitute, also.
