With a spoon or potato masher, mash 1 pound raspberries. Stir in 3/4 cup simple syrup, 1/3 cup limoncello, and 2 tablespoons lemon juice. Pour into 10 ice pop molds and freeze at least 4 hours or until completely frozen. Recipe for homemade limoncello after the jump.
To enjoy any boozy Popsicle, just make sure you don't add too much liquor or your pop will not freeze. 20 percent alcohol in the mixture is the maximum for pops. To make your own limoncello, use a vegetable peeler to remove the zest of 10 lemons. Pour a 750 mL bottle of vodka over lemon peel into a large container with lid. Refrigerate for 1 week, shaking daily. Combine 3 cups water and 3 cups sugar in a sauce pan, and cook over medium heat until melted. Add simple syrup to vodka mixture, and let sit for at least 3 days before straining into bottles. Keep mixture refrigerated for up to 3 months.
