cocktail o'clock: hibiscus cooler

Also known as The Hot Pink Drink (in our kitchen), this cocktail is equally perfect for happy hour tonight and boozy brunch with mom on Sunday.

Bring 2 cups water to a boil, add 4 hibiscus tea bags and 2 tablespoons honey, then let steep 5 minutes. Remove tea bags and let cool. Stir in 8 ounces of vodka, 1 oz lime juice, and pour into 4 glasses filled with ice. Top with sparkling water and sliced lime.

    I also love drinking hibiscus tea made from hibiscus flower but I've never added honey to it before. Might as well give it a try some other time then.
