lentil soup again?!

Making large batches of soups, stews, or beans is a great way to stretch a dollar and have food on hand when you are short on time. The only problem for me is that, after the third day of leftovers, I am completely bored. What to do? I just chop up a bunch of fresh veggies to throw on top, which makes kind of a salad-soup. It's a treat to beat those late winter blues, and it helps you get ready for the swimsuit season that is right around the corner. I had some lentil soup leftover today, so I dressed it up with radishes, cucumber, shredded carrots, scallion, avocado and yogurt. Winter doldrums - banished!

    Oh, this is a great idea!! I'm pregnant and need tons of protein - preferably low-calorie proteins - so lentils and beans are ideal for me. But boy, do I get so bored eating the same thing almost every day! Nice way to change it up a bit.

    I happened to have some lentil soup in the freezer so I tried this. I didn't really like the combination of fresh vegetables in hot soup - sort of made everything luke warm. The next night I included leftover roasted vegetables and a little nutty wild rice. Bam! It was delicious.

    Lots you can do with this. Try to strain a few tablespoons and use in a wrap with rice and some cooked broccoli or some spinach. Take spices up a notch - you can't go milder later - with tomato paste or garam masala or peanut butter (really!) or soy sauce or chilis. Or strain them and make a veggie burger (there are too many recipes for this so I won't add my own). Leftovers sounds so boring but many recipes call for cooked lentils to begin. This doesn't need to be boring at all.

    That is an excellent idea for those who do not know what to do with lentils left and do not want to repeat the same food again, we might want to try this delicious recipe.
