today's recipe: eggplant and mozzarella melt

The eggplant slices are breaded and baked, not fried, which reduces the amount of oil used in this recipe.

    I have taken eggplants, sliced 3/4" thick vertically, and brushed them with garlic-infused olive oil + sprinkled with coarse salt & broiled them. Then I added layers of marinara, mozzarella & parmesan. Low-carb, lower fat & easy!

    I'm in love! I particularly like the fact that it's baked, not fried (though both are quite delicious).
