Combine superfine sugar and ground cinnamon and place on a small plate. Run an apple wedge around the rim of a rocks glass then dip into cinnamon-sugar mixture. Combine 2 ounces whiskey or bourbon and 1 tablespoon honey. Fill a rocks glass with ice and pour whiskey-honey mixture over the top. Top with 8 ounces sparkling apple juice and garnish with an apple wedge.
