easy picnic dessert: lemon curd

I needed a lemon dessert that was easy to transport for a birthday picnic. Our lemon curd recipe worked perfectly—I carried it in a cold bag with ice packs and then assembled tartlets at the picnic, using blueberries as topping. I found frozen tart shells just like were used in the story at Whole Foods in the freezer section. I stored the curd in a cute glass jar I was going to recycle, so that the birthday girl could take the leftovers home.
