We've given you great ideas for boat-friendly foods on this blog before, but on a recent trip to Nicaragua I set sail in the Pacific with some local fishermen and watched them whip up the easiest, freshest and most boat-appropriate snack ever - ceviche! Here's a step-by-step guide, so next time you find yourself on a boat with a barracuda you'll know exactly what to do.
1 Step 1: Head out to sea.
2 Step 2: Catch a fish! (I caught a small barracuda.)
3 Step 3: Clean and skin the fish.
4 Step 4: Slice limes. I was still working on my sea legs, so I left the knife wielding to the real fishermen.
5 Step 5: Squeeze lime juice into a clean bowl. (There was some onion dicing at this point too, which I didn't manage to capture on film.)
6 Step 6: Cut the fish into half-inch pieces.
7 Step 7: Season fish with salt and hot sauce.
8 Step 8: Let marinate for about 5 minutes, then enjoy! We scooped it up with some Saltine crakers.
