
Roasting two chickens instead of one doesn't take up more space, or additional time. So why not? The leftovers come in handy.
Try this spice mix the next time you're roasting a chicken; you probably have all the ingredients in the pantry. Combine 3 tablespoons dried oregano with 1 teaspoon each crushed red pepper flakes and anise seed. Grind to a powder in a spice grinder or mortar and pestle. Season the chickens inside and out with coarse salt, then sprinkle on this mixture. If you planned ahead, refrigerate the seasoned bird (or birds, as I did, above), for up to 24 hours, before roasting. I'm kind of addicted.

I am a vegetarian, but sadly not when it comes to roast chicken!... this sounds amazing and I can't wait to fall off the wagon and try it!

Nice trick to cook 2 chickens at the same time. Great for saving precious time. Why I have never thought of that. Always was cooking like 3 different main dishes.
