meatball pizza

Friday night dinner needed to be quick and fun, and my remaining meatballs and sauce helped accomplish both goals. I used leftover naan bread as the pizza base (pita or prebaked pizza rounds would have worked, too). I brushed the naan with some olive oil before covering it with the sauce. I also sautéed some garlic and onion to use as toppings (I precooked them as I knew the pizzas didn't need to bake too long since I wasn't using raw pizza dough as the base.) I cut the meatballs into slices and layered them with the onion and garlic slices. I topped the pizzas with grated Manchego and cotija cheeses. They needed just 10 minutes in the oven before they were ready to eat.
