Here we are midstream between Christmas and the New Year, and I'm betting your fridge is still stuffed to the gills with remnants from the holiday dinner (or dessert). The idea of another big meal might be the last thing on your mind (personally, I'm still full), but what if you could transform the meal into new dishes to eat all week? Some ideas come to mind:

Mashed potatoes make great little potato pancakes: press the potato mixture into a small disc, coat lightly in flour, then cook in a non-stick skillet with a little oil until browned and crisp on both sides.
Cooked vegetables can find a new home in minestrone soup; add them in step 2.
Extra sugar cookie or pie dough scraps can be rolled out, cut or torn into cookie-sized pieces, brushed with cream and sprinkled with sugar. Bake at 350 until golden brown.
