When they were testing the Thanksgiving menu for our November issue, I scored turkey meat and cranberry sauce. I reinvented the leftovers for a quick weeknight dinner. I diced the turkey meat and tossed it with chunks of cucumber. I added yogurt and a bit of mayonnaise to the cranberry sauce to make a creamy dressing. The cranberry sauce includes pomegranate seeds so it added an extra crunch and flavor boost to the salad. I ate it by itself but it would have tasted great on a bed of lettuce or a thick slice of toast. What do you do with your Thanksgiving leftovers?
