behind the scenes: salted caramel ice cream from the martha stewart show

Martha and Thomas make ice cream on The Martha Stewart Show

Our friend Thomas Joseph, Assistant TV Chef for the Martha Stewart Show, made Salted Caramel Ice Cream with Martha on last Monday's Thanksgiving Desserts show. A little ice cream inspiration from Thomas after the jump.

"Crème anglaise is a fantastic base for any flavor of ice cream/gelato. Here are some photos that show just how simple it can be to create a number of flavor variations...the best part is that you're only limited by your imagination...well, that, and what you have in your pantry."

Yum. I made this. But, with the sweet cream base from Ben & Jerry's, not the creme anglaise base here. That one was easier, and not cooked - I get my eggs from a CSA farm.
The salted caramel was SO good. Tasted a little too salty before it was mixed with the sweet cream base. Tasted not quite salty enough after it was mixed with the base.
It was easy and good, though. Very similar to Haagen-Dazs Dulce de Leche. But better and fresher - natch.
