Cheese Fingers

Calling all clueless bachelors, hungry kids, tiny kitchens, comfort food cravers . . .

On Monday we tweeted about a quick dinner of Cheese Fingers and Tomato Soup and were surprised by how many people wanted the "recipe" (if you can call it that—more like instant gratification on a plate!). So, here's a pic and how we made it (and if you're looking for us on twitter, we're at twitter.com/everydayfood).

Toast bread—your choice. Add a smear of butter or mustard (or mayo, or hot sauce, what do you like???). Top with grated melting cheese (like cheddar, monterey jack, Gruyère, fontina, and so on). Broil. Cut into fingers (aka soldiers) and dip into soup. Done!

Can add: a slice of ham, a few pickles, tomato, avocado, roasted peppers. No, you tell us—what's your favorite from-scratch, gotta have it, cheese-y snack?

    I love grilled cheese and tomato soup! I butter the outside of 2 slices of bread and make an actual sandwich with about 3 slices of real cheddar cheese inside. I put that in a flat pan and grill until the outside is golden and the cheese inside has melted to seal the bread together. It's so simple but the taste can't be beat for some comfort food.
    For what I call a snobby version, I like to occasionally make one with mozzarella, basil leaves and tomato slices.. sometimes a bit of garlic too. I've got to try this with a focaccia bread though! I think it would be yummy!

    One of my family's go-to easy, cheesy snacks are what we call Cheese Crisps. Take a flour tortilla and sprinkle over a handful of grated cheese. Bake at 350 until the cheese is melted and the edge of the tortilla is crisped a bit. Cut into wedges and serve with salsa, sour cream, hot sauce, guacamole or avocado. They are a staple in our house for football watching!
