I am not a big fan of standard breakfast fare. I can't stand eggs and I really loathe a sweet breakfast (maple syrup first thing in the morning, yuck). So I typically have what most people would consider lunch for breakfast - an avocado and hummus sandwich on whole wheat bread or bean tacos with hot sauce. This morning I had a great mixed grain (quinoa and bulgar) salad with tomatoes, thinly chopped raw wax beans, tarragon, feta, and a little olive oil and lemon juice. It was nutritious, filling, and so good.
Weird? Maybe a little but I'm okay with that.
