    I saw this recipe in this month's Everyday Food magazine and made it tonight, then realized just now it's the recipe of the day! What a coincidence!!

    I fried the eggplant instead of baking it, but followed the recipe exactly other than that. I thought it was excellent. I served it opened face and had tomato sauce on the side to dip our bites in. Went over great with the family. A delicious dish.

    Wow this looks good. I love eggplant and have trouble finding really good recipes for it.

    I made this the other night! I sprinkled red pepper flakes before layering on the eggplant since I like spicy foods. I'm not usually an eggplant fan, but this was fantastic!
