Well, it's cooled down quite a bit here on the east coast (after our heat wave, 85 degrees feels like there's a chill in the air), but still, a no-cook dinner is what summer's all about. I'll eat feta on anything. This salad is also great because it's got white beans, which are a great source of protein and fiber. You could just as easily toss in a little shredded cooked chicken. If you like a little extra heft to your dinner, serve this with toasted crusty bread, or even some brown rice on the side.
