one-pot monday: eggs for supper

I have nothing but love for meals built around eggs. They are quick and nutritious, and it's always fun to have breakfast for dinner. This quick egg fry-up would be great with some crusty bread and a simple green salad.Cut the bacon crosswise into strips; if using slab bacon (pictured) cut it into 1/4-inch pieces. Render the bacon in a large skillet—cast iron if you have it—then add chopped fresh tomatoes and season everything with salt and pepper. When the tomatoes have cooked down to a chunky sauce, add eggs, lightly beaten, and stir until they are loosely set. Throw in some chopped herbs, like basil or parsley, and serve right away.
