This simple grain salad was an easy way to use up some wheat berries that I had in my cupboard. Wheat berries are the entire wheat kernel, hull and all; they are a nutty, chewy and delicious. I would try it again with pearled barley or even short-grain brown rice. Once the wheat berries were drained, I tossed them with a mustard-y vinaigrette, some chopped cucumbers and asparagus. With a little crumbled feta on top, I call this dinner!
