today's recipe: pork chops with rhubarb-cherry sauce

Variation: The cherries can be replaced with other dried fruit, such as golden raisins; soften as instructed in step 1. The rhubarb sauce can be refrigerated in an airtight container for up to one week. Try it with roasted chicken or drizzled over toasted bread topped with goat cheese.

    Here is a sweet and sour sacue to make with rhubarb. I love to cook and bake with rhubarb, and always wonder why more people do not grow it!


    2 cups diced rhubarb
    1 cups cranberries
    1/2 cups Plus 2 tbsp. granulated sugar
    1/4 cup orange juice (fresh is best)
    1/4 cup liquid honey


    In a saucepan, combine all the above ingredients.

    Bring the sauce mixture to a boil, stirring often.

    Reduce heat and simmer, uncovered, for about 15 minutes or until rhubarb is tender and sauce has thickened.

    Serve over chicken, turkey, or pork.
