I love a basic rice cake. Plain, lightly salted, or maybe even popcorn flavored are some of my favorite snacks. However, my most favorite is one I flavor myself with a little Parmesan and fresh ground pepper. I just top a plain rice cake with a few (VERY) thin slices of Parmesan shaved from a block, or with a sprinkle of grated Parmesan, and add a couple spins from the pepper grinder. Then I pop it in the microwave until the cheese just starts to melt, but is not burnt. This takes about 3 seconds in my super-powered, anything-cooks-in-1-minute-or-less microwave; it takes 3 minutes in my boyfriend's ancient microwave that uses an analog timer; and here, at work, it took somewhere in between. So just be mindful of bubbling cheese and smoke until you know where your microwave fits in this spectrum.
Then voila! Deliciousness!
