There are very few things that I won't eat, and I am by no means a vegetarian. That being said, I don't like to eat meat everyday, and when I'm feeling particularly herbivore -ish, I reach for a sweet potato. Packed with beta carotene and vitamin C, these little gems cook up fast in the microwave (about 4 minutes for a medium-sized guy) and are a compliment for a slew of toppings. Here, I just sauteed up some thinly-sliced onion, zucchini and a handful of baby spinach, and topped the whole thing off with some low-fat Greek yogurt. Filling and healthy (make sure you eat that skin, too) this is a dinner that will surely satisfy the whole family.
Also try: sauteed kale with pumpkin seeds or quick sauteed apples and pecans.

Oh yay! I have all of this in my fridge, except the sweet potatoes. Maybe I'll improvise....
