After the Easter egg hunt and Passover seder, what to do will all those hard-boiled eggs? A quick survey in the test kitchen yielded the following tasty ideas:
Egg salad (with yogurt), deviled eggs, topped with Sriracha or your favorite hot sauce, sliced and added to a sandwich, grated and used as a chic topping for blanched asparagus, Nicoise salad, blended into a creamy Caesar dressing, pickled and last but certainly not least, covered in sausage, breaded and deep fried, the masterpiece that is the Scotch egg.

Last year I put together a recipe for avocado and cilantro deviled eggs. They were fantastic, if I do say so myself.
