Valentine's Problem Solved: substitute for corn syrup

Q: I live in South Africa. I've seen a fudge recipe by Martha that calls for light corn syrup. Corn syrup is not available anywhere in South Africa. What can I use as a substitute? –Joash

A: We have seen baking substitutes that recommend using 1/4 cup water to 1 cup sugar, but we found this to be an unreliable method. Instead, look for Lyle's Golden Syrup, which should be interchangeable for the corn syrup. Hopefully you can find it in South Africa!

  • Hi guys. I also live in SA and have so many American recipes that I bake in my little baking shop. The right substitute for corn syrup is Glucose Liquid and can be found in any baking shop. You'll see that most of your recipes will specify 'light corn syrup'. Glucose is almost clear, if it was labelled corn syrup, no-one would argue that is isn't.
