
Gorgeous fresh sardines on ice.
I have recently tried to increase my fish intake in an effort to get more omega-3 fatty acids in my diet. Sardines are a great source of this essential nutrient. Fresh sardines can be hard to come by and a challenge to prepare. Luckily last spring Randy Hartnell, the founder of Vital Choice seafood, came by the kitchen to introduce us to their products. Their canned sardines are far better than any I have ever had and are now a staple of my diet. Also, sardines, along with mackerel and herring have the added benefit of being a sustainable fish. I like to eat them with crackers and a little yogurt mixed with either horseradish or grated cucumber. A very healthy and quick snack.

I like sardines as well, the canned variety. The most flavorful ones are packed in olive oil with one or two chilies from Portugal. Great with hearty bread to soak up the oil or steamed rice.

You can get omega-3 without eating fish from flax seeds.

I mash up sardines and add them to tuna fish salad. It ups the omega-3 and cuts down on the mercury. My boys eat the tuna fish salad and don't know I snuck sardines in there.
