On a recent trip to Miami I had a great lunch at a Cuban diner just south of the Design District called Enriqueta’s Sandwich Shop. Being that the Super Bowl is in Miami this year, I was thinking that it would be great to have Cuban inspired food at my party. What’s easier than cooking up a pot of black beans and rice? Instead of making individual Cubano sandwiches make one big one (like a sub), bake it in the oven under a weighted cookie sheet, and slice into bite size pieces. Serve up some café con leche and flan for dessert. Most of these items can be prepped ahead of time so there will be plenty of time to watch the game (or the halftime extravaganza - that’s really the only part I like!).
