It's easy to make a chocolate dessert look fancy by sprinkling the top with shaved chocolate. Above are three different techniques for shaving chocolate. The first uses a bench scraper for large shavings. The second uses a peeler for medium shavings and the third uses a Microplane zester for fine shavings. You will get the best results with the large and medium shavings if your chocolate is slightly warmer than room temperature. This can be achieved by microwaving the bar for just a few seconds. Can anyone give me the scoop on a Girouette? I have seen them on line and an not sure exactly how I would incorporate it into my kitchen. I am intrigued by this unusual gadget but not sure of all the uses. It is supposed to be a chocolate shaver too.

Hi Elyse,
I have never used a Girouette but it appears that they are primarily for making the fancy "pompoms" that one sees on cakes in French bakeries. I am sure that you could use it to make large shavings as well.
