
Even though it's a bit of a cliche to try to eat healthy come New Year's, it's a good opportunity for a fresh start. And what better place to start than breakfast? I'm a huge fan of eggs and omelettes, but when I was visiting my mom last weekend, I wanted to cook up something that would make both of us feel energized (not put us to sleep). So instead of making the eggs the main event, I put the focus on the vegetables.
My mom had yellow peppers, onions, and tons of spinach on hand, so I sauteed generous handfuls of each in a frying pan with a bit of olive oil, then added eggs beaten with a dash of ground cumin, coriander, and cayenne for a bit of spice. Once the eggs were mostly set, I put the pan in the oven to broil the top. The result was almost more like a vegetable frittata than an omelette, and we had plenty of leftovers for dinner!

Hi.I think that you have to use egg whites , and change the olive oil for pam spray and you will have a fat free frittata

Sounds good. But, from what I've read lately, eggs may be the most maligned food in the western world (aside from, say, Twinkies). Apparently, the cholesterol in egg yolks may not be as bad as we've all previously assumed. Personally, I still avoid them but, in any case, I heard about something that sounds delicious over the weekend: scrambled eggs with pasta - that is, you scramble the eggs while sauteing cooked pasta in a pan with some oil and maybe a little green garnish - like parsley. For someone who loves both eggs and pasta, I think it may turn in to my favorite comfort food - though I haven't tried it yet.

I add a sliced banana and 1/3 c. frozen blueberries to mini shredded wheat or nugget cereal for breakfast. The skim milk freezes around the blueberries, creating a lovely glaze, which I enjoy thawing inside my mouth. It wakes me up and gets me started on a good day!
