Who doesn't love hot chocolate? And now I've discovered a quick way to make some without milk. I hesitated to leave milk out of my hot chocolate, but happily, as a dark-chocolate fan and former coffee drinker, I find it pleasantly dark and flavorful this way. It's just a couple of spoonfuls of plain cocoa (you can find it in the baking section; try a few brands over time--they all taste a little different) with boiling water poured over it. I enjoy this hot cocoa sweetened with agave nectar and a splash of vanilla. Cinnamon's good, too; and of course you can use your sweetener of choice. Occasionally I will top a cupful with nutmeg for a festive flair. Have a steaming cupful after shoveling snow--it'll warm you right up.

Being lactose intolerant, I'm always sipping on dairy-free hot coco in the wintertime...and iced hot coco in the summer...it's delish! Thanks for this great post...adding dark chocolate and raw cacao makes the perfect cup of hot coco.

Agave is my new best friend in the kitchen -- I've been using it to make anything from energy chunks to pies. So, this recipe is a delight! Can't wait to try it out.

I made a cup with 2 tsp unsweetened cocoa, about a tsp semi sweet chocolate and a tablespoon of ice cream, since my lactose intolerance can handle that much dairy. I also added about 1/2 tablespoon of sugar.(Since I like about that much in a cup of coffee, that sweemed to make sense.)
It was delicious!
